White Chocolate Cranberry Cookies
This is very simple recipe for delicious cookies.
I make these cookies for my boys every time they crave some sweet treats. One of my boys is Type 1 diabetic so sometimes I make two batches and I substitute the sugar with Splenda in one batch of the White Chocolate Chip cookies. They still taste delicious and he can take them to school for snack.
You can also change the white chocolate chips for semi-sweet and butterscotch chocolate chips and cranberries for raisins.

White Chocolate & Cranberry Cookies
This recipe makes about 6 dozen cookies.
Ingredients:
- 1 cup Butter (unsalted, room temperature)
- 1/2 cup Brown Sugar
- 1 cup Sugar
- 2 tsp Vanilla Extract
- 2 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs (beaten)
- 2,5 cups Flour
- 1,5 cups White Chocolate Chips
- 2 cups Cranberries
Preheat oven to 350F. Grease cookie sheet.
In a large bowl cream together butter, sugar, brown sugar. Add vanilla extract, baking soda and salt. Mix thoroughly. While mixing gradually add the beaten eggs and the flour. Incorporate it all together. Then add the chocolate chips and cranberries. Mix well.
Drop by teaspoons onto the cookie sheet. Bake about 12 minutes or until nice and brown.



These look yummy and I have a whole package of dried cranberries I need to use. Things to do tomorrow…
