Sour Cream Apple Cake

The other day my husband brought home a big box of delicious, juicy apples. We have been eating them everyday, but it seemed like the box was bottomless so I needed to use some of the apples in baking.

I decided to make Sour Cream Apple Cake. I got this recipe from one of my old friends few years ago. I haven’t baked it in a long time and I forgot how delicious it was.

The Sour Cream Apple Cake is delicious to eat on it’s own, but serve it with ice cream and you will have a winner.

Sour Cream Apple Cake

Ingredients:

  • 2 cups Flour
  • 2 cups Brown Sugar
  • 1/2 cup Butter (softened)
  • 1 cup Walnuts (chopped)
  • 2 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Sour Cream
  • 1 tsp Vanilla
  • 1 Egg
  • 2 cups Apples (peeled and chopped)

Preheat oven to 350F.

In a large bowl combine flour and brown sugar. Cut in the butter and mix until crumbly. Stir in nuts.

Take 2 3/4cup of the mixture and press it into 9 x 13″ pan to make the bottom crust.

To the leftover mixture add cinnamon, baking soda, salt, sour cream, vanilla and egg. Mix it well. Stir in apples and spread the mixture over the crust.

Bake for about 30 minutes.

Tip:

Sometimes I make it with Splenda Brown Sugar Blend to be more diabetic friendly.
