Pasta with Spinach & Sun-dried Tomato

Pasta dishes are very popular when it comes to feeding my family.

There are thousands and thousands of great pasta recipes that are delicious,satisfying and budget friendly.

I make at least two pasta dishes a week. I serve my pasta with red sauces, white sauces, rose and pesto.

My favorite pasta sauces are made with cream and white wine.

Penne with Spinach & Sun-dried Tomato

There is nothing better then using fresh ingredients when making family pasta dish.

Last week I was craving some Penne pasta with cream sauce. I decided to add fresh spinach and sun-dried tomatoes. My kids are not big tomato and spinach eaters, but they licked their plates clean that night.

Ingredients:

  • 6 cups Pasta (cooked)
  • 2 Tbsp Extra Virgin Olive Oil
  • Onion (finely chopped)
  • 2 Tbsp Sun-dried Tomatoes
  • 1/5 cup White Wine
  • 1/2 cup Heavy Cream
  • 1/2 cup Half & Half
  • 2-3 Clove Garlic (chopped)
  • 3 cups Fresh Spinach (washed & dried)
  • Salt
  • Pepper
  • Parmesan Cheese

In a skillet heat the olive oil on medium high. Add the chopped onions and cook until translucent.

Add the sun-dried tomatoes and cook for 2-3 minutes. Add white wine and let it reduce by half.

Add heavy cream, half-&-half and garlic. Let it boil till sauce thickens.

Salt and pepper to taste.

Right before the sauce is done stir in the spinach and mix it in well.

Plate it and sprinkle with shredded Parmesan cheese.
