Hawaiian Chicken Dish

The other day I was thinking how to makeover plain old chicken breast. If it was up to my husband we would just slather the chicken breast with BBQ sauce, some spices and throw it on the grill. That’s my man for you.

I though my family deserved better meal then that and I was craving something tropical. I was thinking juicy chicken breast dish with hint of citrus or tropical fruit.

Few years ago I remember going with my best friend for lunch to a local pub. She ordered Hawaiian Chicken Burger. It was just grilled chicken breast brushed with Teriyaki sauce and served with slice of pineapple. Nothing special, but it gave me an idea for my Hawaiian Chicken and Rice.

Hawaiian Chicken Dish

This recipe serves 4.

Ingredients:

  • 2 Large Boneless Skinless Chicken Breast
  • 1 Onion
  • 1 cup Mushrooms (sliced)
  • 3 Tbsp Teriyaki sauce
  • 1 can Pineapple Chunks with juice
  • Salt
  • Pepper
  • Flour
  • Oil

In a large skillet heat the oil. Finely chop the onion and saute it till golden brown. Cut up chicken into Stir Fry strips and lightly cover in flour.

Add it to the skillet and brown. Add Teriyaki sauce and saute till the chicken is almost done.

Just before the end add pineapple chunks (keep the juice for de-glazing) and mushrooms. Saute for few more minutes till everything is heated thoroughly.

Taste and add salt and pepper as needed.

Pour in the pineapple juice and de-glaze the skillet.

Serve it over rice.
