Pomegranate Mousse Filled Cannoli
I received an email from Kristen @ POM Wonderful…”I’d love to send some of our 100% pomegranate juice your way – perhaps you can experiment and use in a new recipe, it’d be great to hear what you create…”
I was so excited. First, because somebody was reading my blog. Second, because I had a project and third I was getting free Pomegranate juice to play with.
That night I was thinking all night about what can I do with the Pom Wonderful POMEGRANATE juice. My first idea was….Pomegranate Mousse.
Then I though about putting it into my husbands favorite Italian pastry Cannoli.
Well, it took me a while to actually find the time to make the Pomegranate Mousse filled Cannoli , but here it is.
I must admit that I cheated little bit because I could not find my MIL’s Cannoli recipe so I went out and used the pre-done Cannoli from the little Italian corner store.
I promise I will post her recipe when I get some time to look for it. Her Cannoli are the best.
I did dip the Cannoli in white chocolate by myself if that makes it better. Does it?
Ingredients:
- 24 Cannoli Shells
- 3/4 cup POM Wonderful juice
- 1/3 cup Sugar
- 1 Tbsp Clear Gelatin (1 package)
- 2 tsp PAMA Pomegranate Liqueur (optional)
- 1 cup Heavy Cream
In a pot bring to boil POM Wonderful and sugar. Remove from heat.
Dissolve the gelatin according to it’s package and add it to the pomegranate mixture. Add the pomegranate liqueur and stir well. Cool it down till it’s starts to thicken.
In a large bowl whip the cream until firm. Stir little bit of the whipped cream into the cold pomegranate mixture till well combined. Gently fold in the rest of the whipped cream, cover and chill in the fridge.
With a pastry bag fill the Cannoli and leave in the fridge before you are ready to serve. Decorate with fresh pomegranate.
I didn’t have enough Cannoli so I mixed the POMEGRANATE MOUSSE with some fresh pomegranate and I served it in Daiquiri glasses with a piece of Biscotti (delicious).

Those are so beautiful! I love pomegranate, but for some reason, they intimidate me when it comes to cooking. I may just have to conquer them with the recipe!

I love what you did with the POM. Kristen contacted me too, and I was thrilled to have received the generous sample of the product to play around with. My family enjoyed the juice plain, and I created a lovely warm POM cider for a holiday open-house. I’m feeling an especially kindred connection with you, in that my second POM concoction was also a mousse! Fancy that! How random! Mine was a POM white chocolate mousse that I layered with chocolate cake for a holiday trifle! Did you ever hear back from Kristen or anyone at POM? I never heard anything after my first post about the warm cocktail, so the post about the mousse trifle kind of fell by the wayside. I hope both of our experiments with POM have inspired a few people to try the product. I think it’s positively first-rate!
